Garantizan la m\u00e1xima ternura y una sensaci\u00f3n jugosa en la boca, al tiempo que garantizan la fibra natural de la carne. Con tiempos de golpeo cortos y mec\u00e1nicos se pueden conseguir rendimientos de entre el 10 % y el 50 %. Todos los sistemas son tambi\u00e9n muy adecuados para la congelaci\u00f3n r\u00e1pida individual (IQF) de productos c\u00e1rnicos. Cuando se combinan con marinados con especias o marinados en seco, tambi\u00e9n se evita la exudaci\u00f3n de jugos posterior en los envases y se aumenta la calidad y la vida \u00fatil del producto.
